With several decades of international hospitality experience amongst our team, we are pleased to offer our wine consultancy services to restaurants and bars, here in the UK, and overseas.
We are able to offer a fully bespoke service where we can work to create connections with importers and winemakers, providing a comprehensive vision and strategy to complement any other offerings. We are well versed in the setting up of cellars to suit budget, and can provide training materials, in-person trainings, as well as delivering full circle reviews at interim periods post-completion.
As well as operating our own restaurant, Cadet, in Newington Green since 2022, we recently completed work for Hôtel du Couvent in Nice, France (recently ranked no. 27 in the 50 Best Hotels). A summary of our work is below, with a reference from the owner, Valéry Grégo.
The opening of Hôtel du Couvent was in the works for many years and we were pleased to be considered for the entire wine vision for the project which opened in the summer of 2024. After formulating an initial creative vision we sourced wines for each of the 4 F&B locations (as well as room service) within the hotel. This involved working with distributors as well as directly with winemakers, creating individual concepts and lists for each location. We delivered training to every employee in the hotel, ensuring no one was left without knowledge of why the hotel was focussing on working with living wine, and provided specialist training to the hospitality teams within the respective restaurants and bars. Furthermore, we aided in the employment process to ensure the right people were hired to run the wine programme once the hotel had opened. Finally we provided on site assistance running up to the opening, helping with cellar organisation and stock reconcilation.
A very special piece of this project was the creation of Les Vins du Couvent, three wines bottled with unique labels just for the Hotel, working with Domaine Fond Cyprès in Corbières. This, along with many other aspects of our involvement over the course of more than a year provided a truly bespoke wine programme for this incredible project.
