A new cuvée from Catherine where the grapes were hand-destemmed and then macerated for 6 days. This light maceration has brought a deeper golden colour in the glass and brought out a vibrant minerality with energetic structure with a crisp, lean finish. An interesting counter-point to the ouillée Savagnin, where we find a different side to the grape.
