The grapes here were harvested from a parcel planted on clay and limestone soil next to Jean-Louis’s cellar in Limoux. Three quarters of the bunches were directly-pressed with one quarter held back for 10 days of maceration, with the resulting juice then aged for 1 year in sandstone jarre. A precise and racy southern Chenin that benefits from just a touch of texture balancing its bright fruit.
