The grapes were harvested from 40-year-old vines of Grolleau Noir. The fruit underwent a very short maceration to create a bright rosé colour. Toby opted for a finer style of bubble for this wine, vinifying as a methode champenoise with no dosage. The result is a lean, lively fizz with aromatic red fruits.
