From fruit picked on the final harvest of Axel’s Cinsault vineyard a further 10 days after those that went in Oili Oili Oila. With this more mature fruit, Axel opted for a slightly longer maceration of 15 days before pressing and élevage in cuve. The finished wine has an earthier, more complex expression of red fruits and the soft suggestion of tannic structure.
