100% pinot noir from a 0.8ha plot of 25-year-old vines planted on clay. This vineyard is too steep to be worked by horse, so everything is done by hand. Very low yields. The grapes were de-stemmed by hand and macerated for 3 weeks. Originally a little more austere than it’s whole bunch maceration brother, this has aged for an extra year in bottle and is now singing. Showing a savoury and earthy side to the grape that speaks of Stéphane’s neighbouring region Alsace.
