The fruit was picked from Sylvain’s vines on limestone soils. The grapes were directly pressed and finished their fermentation in the bottle making a softly effervescent pétillant-naturel. Sylvain then disgorged the bottle at the beginning of 2025 after 18months on the lees. A hazy, textured wine with a gentle bubble and crisp orchard fruit.
