Made of Grenache Gris grown on limestone soils picked from Jean-Noël Pilliez’s vines in Salses, Roussillon. The fruit was left in whole bunches for a 15 day maceration at Wilfried’s cellar in the Pyrénées. Lean and precise, this shows bright acidity with a cascade of citrus notes and is a wonderful accompaniment to the heartier dishes of the season.
