A new cuvée from Wilfried! The fruit was picked from vines with limestone-rich soils farmed by winemaker Jean Noël Pilliez in Salses, Rousillon. The grapes saw 3 days of whole-bunch maceration at his cellar in the Pyrennées mountains, before a 9 month élevage. Crunchy and savoury, with just a touch of tannin, this is a perfect bottle to bridge the gap between winter and springtime.
