The sweet, unfermented must of Catherine’s young Savagnin vines was combined with barrel-aged marc, and the resulting juice was left to mature for four years in barrels to settle and soften. Made in small quantities, this version of the local Macvin shows layers of caramelised nuts, dried fruit and a pleasing acidity to match the sweeter notes.
