From Séb’s own 70 year old vines adjacent from the cellar, planted on sandy granitic soils. The grapes were mostly de-stemmed with 30% remaining in their bunches and underwent 4 months of maceration in cuve, with no piegage or remontage, followed by a slow, careful 12 hour press. The juice saw élevage for 6 months in fibreglass before bottling. Lots of rain followed by extreme heat led to early picking making the 2021s much closer in style to his ‘19s. At 11%, this is a lithe wine tasting of dark cherries with a subtle earthy structure and faint, soft tannin and, as usual with his reds, will reward those patient enough to cellar it.
