The fruit was all harvested at the same time from a co-planted parcel situated just in front of Laetitia and Rodolphe’s home and cellar. Harvesting the grapes all together at various stages of ripeness results in a natural balance between richness, aromatic fruit and vibrant acidity. And where in the past this cuvée was aged in oak, latterly the pair have decided to use stainless steel tank for élevage, keeping the wine lean and focused.
