2024 was a challenging vintage providing another low maturity crop, so opted to make a still wine from the vines that would usually go into his pétillant Bouillon Blanc. The fruit was harvested from 45-year-old vines, directly-pressed, and left to ferment and age in fibreglass. An uplifting wine with a delicate floral nose and a palate of rounded orchard fruit, lifted by bright, energetic tension.
