Made in extremely low quantities from Hervé’s small Pinot Noir parcel. After harvest, the grapes were destemmed by hand and macerated for two weeks before a gentle press and then a year of ageing in old barrique. Vibrant aromatics excite on opening, with layers of autumnal berries and earth combining with a perfectly judged acidity and delicate tannins. For an area not particularly noted for growing the variety this stands shoulder to shoulder with some of the best.
