Julie and Toby like to harvest the fruit for the rosé a little earlier than full maturity to preserve as much freshness as possible. The grapes here, from some of their older vines, were directly pressed before a short élevage in fibreglass cuve. A jolly pale pink in the glass, it shows an array of tart red fruits with a bright, crisp finish.
