From grapes grown over clay and limestone, which, when brought back to the cellar, were immediately pressed over several hours in Stéphane’s basket press. Before fermentation was complete the wine was bottled giving a sherberty (and quite active!) pet’ nat’ with plenty of little red berries on the palate and a dry mineral finish. Open with a glass to hand.
